Mango Jicama Salad

Ingredients
1 Mango Diced1/2 Cup Red Bell Pepper Diced1 C Jicama peeled and Diced2 T. Shallot mincedLime Juice and Zest of 1 lime1 Tsp Granulated Sugar1 T. Cilantro chopped1 Jalapeno seeded and minced (optional)
Directions
Combine all ingredients in a bowl. refrigerate while the Salmon is grilling. Let the flavors marry.

I serve this delicious salad with 5 oz Grilled Salmon that has been rubbed with a jerk seasoning. and 1/2 cup brown minute rice.
Salmon 5 oz = 5 Weight Watcher Point
1/2 Cup brown Rice = 3 Weight Watcher Points
