Omelette with Roasted Red Pepper Sour Cream

Ingredients
5 med eggs4T Trader Joes Red Pepper Spread with Eggplant and Garlic2T Sour Cream.5C Sliced Red Peppers1/4C Sliced Onion60g Avocado1oz Parmesan1/2T Olive Oil1 Pat butter
Directions
Cream Sauce:
mix pepper sauce with sour cream till smooth.

Eggs:
Sautee peppers and onions till tender, set aside.

beat eggs.

heat butter and prepare like an omelet, season to taste.

top one half with veggies and parm and fold over

top with cream and sliced avocados.

serves two.

    Normally I top my omelets with a little sour cream. Today I needed a way to use up the opened jar of Red Pepper spread as it is supposed to be used within 4 days, I decided to mix it with sour cream yum! This has so many possibilities, maybe serve warm under crab cakes - 6/23/09
