Homemade Vanilla Pudding

Ingredients
1 tbsp. flour1 tbsp. unsalted butter1 tbsp. brown sugar1 tsp vanilla extract1 cup rice milk1 egg, beaten well
Directions
Melt butter in a small sauce pan. Add flour and stir well. Add sugar and stir well. Cook for one minute. Add the rice milk and whisk until smooth. Cook until mixture thickens. Very slowly add the egg while continue to whisk. Cook for one more minute. Makes 2 one half cup servings. Good with fruit on top.
