Apple Cake

Ingredients
2 c. diced apples1 c. sugar1/4 c. oil1 egg, beaten1 c. four1 tsp. baking soda1 tsp. vanilla1 tsp. cinnamon1/4 tsp. salt1/2 c. nuts (I use walnuts chopped)
Directions
Makes 9 3 inch pieces

1. Mix apples and sugar, let sit for 30 minutes
2. Add oil and beaten egg
3. Stir in vanilla and dry ingredients (batter will be thick)
4. Pour into (well) greased 8x8 and bake 45-50 min.
