Tzimmes Chicken

Ingredients
1 small onion, diced2 cups yams, cut into large dice1 lb. chicken breast, cut into large dice, all visible fat trimmed off12 pitted prunes or 1/2 cup of mixed dried fruit24 baby carrots3/4 cup orange juice1/2 cup chicken stock1 package plain whole wheat couscous
Directions
1. In a large saute pan over medium high heat, brown the chicken on all sides. Remove from pan and set aside.
2. Lower heat to medium and add the onions. Cook, stirring frequently, until just translucent.
3. Return the chicken to the pan. Add the remaining ingredients, turn the heat to low and simmer 20 minutes until yams are soft, chicken is cooked through, and the prunes or dried fruit have plumped.
4, Cook the couscous according to package directions.
5. Serve the chicken mixture over the couscous and serve.
