Orange Ginger Glazed Cornish Hens

Chicken, cornish hens, 2 bird whole *Black Pepper, ground, 1 tsp Mackay's Orange Marmalade with Champagne, 8 tbsp (1/2 cup)Ginger, ground, 1 tsp Annie’s Naturals Organic Dijon Mustard, 4 tsp *Lemon Juice, 2 tbsoLea & Perrins, Worcestershire Sauce, 4 tsp
Preheat oven to 350. Remove giblets from hens - reserve for another use or discard.
Season hens with pepper (and salt if desired - not counted in nutritional information)
Roast hens in oven covered 50 to 60 minutes. A meat thermometer inserted in thicket part of thigh should register 180 degrees F when done.
Mix in a small bowl the marmalade, lemon juice, mustard, Worcestershire sauce, and ginger.
During last 20 minutes of roasting time, baste hens 3 - 5 times with marmalade mixture to glaze. Extra sauce can be used for dipping (or I put some inside the hens).
