Chicken Mozzarella

Ingredients
1.5-2 lbs. chicken breasts2 tbsp. light Italian dressing2 cups chicken broth2 cans Italian diced tomatoes2 cups instant riceItalian seasoninggarlicKraft Fat Free Mozzarella Cheese
Directions
Cut chicken beasts into chunks.

Put the Italian dressing in a large skillet. Cook the chicken in the dressing over medium-high heat until the chicken is cooked through and lightly browned.

Pour in the chicken stock and the tomatoes. Bring to a boil.

Pour in the instant rice. Stir. Remove from the heat and cover for 5 minutes.

Take off the cover, and sprinkle the cheese over the dish. Put the cover back on until the cheese melts.

Makes 6 1.5 cup servings
