"fried" eggplant sandwitch

Ingredients
2 slices of eggplant (about 1/4" thick)1 slice montery jack cheese1/2 tbs olive oil mayonnaisebread crumbs to coat (about 1/4 cup)
Directions
1. coat eggplant in mayo and dip into breadcrumbs to coat
2. "fry" in a heated skillet (with cooking oil spray) until crispy.
3. place cheese on one slice of eggplant with other eggplant on top and heat until cheese is melted
