Breakfast Quiche Cups (South Beach inspired)

Ingredients
6 large eggs7 slices bacon, cooked and crumbled2 slices extra lean ham1 pkg frozen spinach1 cup bell peppers, chopped1 small onion, chopped3 mushrooms, chopped1/2 tsp white pepper1/2 tsp nutmeg1/2 cup grated mozzarella cheese
Directions
1. Cook spinach in microwave as per package instructions.
2. Chop all veggies
3. Add eggs to spinach in a medium-large bowl
4. Add rest of ingredients
5. Spoon into 12 lined or well-greased muffin cups
6. Bake for 20-30 minutes
