2 pints fresh strawberries, hulled2 tablespoons cornstarch1 1/2 cups cold water1 .3 ounch package sugar-free strawberry gelatin1 8-inch reduced-fat graham cracker crust2 cups fat-free whipped topping
Slice strawberries and set aside. In a saucepan, combine cornstarch and water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in gelatin until dissolved. Stir in sliced strawberries. Pour strawberry mixture into the crust. Cover and refrigerate for 2 hours or until firm. Slice into 8 pieces. Add a portion of the fat-free whipped topping to each slice and serve.
