Missy's New Orleans Style Red Beans & Sausage

Ingredients
Camellia Dried Red Kidney Beans - 1 poundSliced Smokey Hollow Smoked Sausage - 1 poundDiced Yellow Onion - 1 mediumDiced Garlic - 1 cloveDried Parsley - 1 tbs.Water - 8 to 10 cupsCayenne Pepper to tasteSalt to tasteCrystal Hot Sauce
Directions
Place red beans in a bowl and cover with water. Set aside.

Heat cast iron dutch oven on medium heat. Place sausage, onion and garlic in pot and simmer until sausage is cooked and onion is tender. Drain sausage on paper towels and return to pot.

Drain rinsed beans and add them to the sausage and seasonings. Add eight to ten cups of water. Add salt, cayenne pepper, and parsley. Bring mixture to a boil. Cover and reduce heat to low. Cook for an hour, stirring occasionally. Remove lid and bring mixture back up to a boil. Reduce heat to medium. Cook without lid for another hour or until the stock thickens up to a creamy consistency. If necessary, more water may be added to achieve desired consistency.

Makes eight, one-cup servings.
