Low Fat, Low Carb Curry Cauliflower Soup (South Beach Phase 1)

Ingredients
1 med Cauliflower head (chopped into small-ish pieces1 Onion (chopped)1 Celery stalk (chopped)1/4 cup 1% Milk1 tsp Curry powder1 tsp Olive Oil
Directions
In medium sauce pan heat olive oil on low heat. Add onion and celery and cook on medium heat until onion is translucent. Add 4 cups chicken broth and cauliflower and bring to boil. Cover and simmer for 20-30 min until cauliflower is soft. Use hand mixer to blend until smooth. Add milk and curry powder and blend until consistent.
