Moroccan Couscous and Chickpea salad

Ingredients
1 Cup couscous (whole wheat)1/2 cup dried fruit1 cup boiling water5 tbs olive oil divided1 large pepper cut up1 large onion sliced1 1/2 tsp cumin1/2 tsp ginger (minced)1/4 tsp cinnamonsalt and pepper1 16 ounze can chickpeas drained1/4 c cilantro3 T rice wine vinegar3 T frozen orange juice concentra
Directions
Place couscous and dried fruit in bowl. Add 1 cup boiling water. Cover and let set 5 minutes.
Heat 2 Tbs. oil. Saute peppers and onions. Add cumin, ginger, cinnamon, salt and pepper. Add to couscous with chicpeas and cilantro.
Whisk 3 T olive oil with seasoned rice vinegar and orange juice. Toss to coat. Cover and refrigerate until you are ready to serve
