Quinoa and Black Bean Tacos

Ingredients
Corn taco shells1 cup dry quinoa, cooked1 cup black beans cooked2 tbsp flax seedslettucetomatoessalsacheese (optional)chili powdercuminlime juicegarliccilantro
Directions
Cook quinoa. Blend in blender or food processor black beans, quinoa, flax seeds. transfer blend into skillet, season with chili powder, cumin, lime juice, garlic, and cilantro to taste.

Put in taco shells, top with lettuce of choice, tomatoes, cheese if desired, and salsa.

Makes at least 6 tacos (nutritional info is for 6 only with cheese).
