Jenny's Vegan Mini Spinach Cheezy Pie Cups

Ingredients
Dough:2 cups of Whole Wheat Flour2 tbsp nutrional yeast flakes1/2 tsp sea salt1 tbsp dried oregano1 tbsp dried basil4 tbsp earth balance buttery spread5 tbsp olive oil1/3 cup of cold waterFilling:10 tsp Ener-G Egg replacer5 tbsp warm water1 cup Quorn Grounds1 tbsp Nutrional yeast Flakes1 cup Almond Breeze Original1 cup cooked spinachPepper to taste1 tsp Cayanne Pepper2.5 oz Vegan Gourmet Nacho Cheese
Directions
Dough:
Preheat oven to 400 degrees. In a bowl mix all the dough ingredients except the water, Mix until "just mixed" and then slowly add water while stiring. Knead dough only for a few minutes, then flatten and roll out.

I used my pampered chef mini muffin pan (24 slots), I cut out disks that fit into each mini muffin slot and set aside for filling.

Filling:
MIx all ingredients together and stir well. Then pour 1 tbsp of it into each little mini muffin slot. Place in oven and cook for 20 mins.

3 mini "pie cups" per serving
