1.5 Cups Cracked Wheat (Bulghur)1.5 Cups Boiling Water1/3 cup lemon juice1/3 cup olive oil1 cup parsley (chop after measured)2 Tbsp. mint1.5 cups chopped cherry or grape tomatoesSalt to taste (1/2 tsp- 1 tsp)
Put bulghur in a large bowl. Pour boiling water over it, stir, and let it sit for 20 minutes to absorb all the water. While the bulghur is soaking, chop the parsley, mint, and tomatoes. When bulghur is ready, stir in all the ingredients and salt to taste. Serve immediately or refrigerate. Both ways are great!
