Jenny Jones Antioxidant slaw

Ingredients
1/2 cup each shredded:romaine lettucefresh spinachred bell pepperyellow bell pepperred cabbagecarrot1/4 cup chopped red onionDressing: 1 Tbsp extra virgin olive oil, 1 Tbsp Balsamic Vinegar, 1/4 dijon mustard, and a dash of salt and pepper to taste.
Directions
In a large bowl, add all of the vegetables, including the onion. Mix the dressing and toss thoroughly for about 1 minute.
