Crock Pot Chicken with Artichokes & Capers

Ingredients
6 ounce package of sliced mushrooms1 14.5 ounce can of no-salt added, diced tomatoes12 ounce package of frozen artichoke quarters1.25 c low-sodium chicken broth1/4 c capers, drained (or 1/2 c olives)3 tbsp. quick-cooking tapioca2 - 3 tsp. curry powderFresh ground pepper, to taste1 pound boneless, skinless chicken breasts
Directions
In a 3 1/2 - 4 quart crock pot, combine all ingredients except chicken. Stir well. Add chicken, spooning some of mixture over the chicken.

Cover and cook on low for 7 - 8 hours, or on high for 3 1/2 - 4 hours.

Serve over rice, noodles or couscous (not included in nutrition facts).

    This was Delicious. I used skinless, boneless chicken legs. High for 3.5 hours. Finished with lo-fat sour cream & served with Naan flat bread. - 2/10/16
