Pizza Quiche Bites

Ingredients
1/2 onion minced1/3 green bell pepper3 large fresh mushrooms5 eggs1/2 to 1 c shredded mozarella1 small tomato10 sliced black olives1 tsp italian seasoningdash crushed red peppersalt and pepper to taste18 slices pepperoni minced2 cloves minced garlic
Directions
in skillet sautee onions, peppers, mushroom and garlic w 1 tsp margarine adn 1 tsp evoo til tender, turn off set aside to cool. Whisk 5 eggs in mixing bowl with italian seasoning, red pepper, sliced black olives, pepperoni and tomato. Add mozarella and stir in cooled sauteed veggies. Spray mini muffin pans w cooking spray and fill with mixture cook at 350 for 30 min or until golden brown. makes 24 depending on veggie content.
