16 oz Davinci radiatori pasta2 teaspoons olive oil1/2 teaspoon ground cuminsalt, to taste1/2 rotisserie chicken, chopped1 15 oz can black beans, rinsed and drained1 11 oz can white and yellow corn1/2 red bell pepper, chopped finely3/4 cup green onions1/2 red onion, chopped finely1 2 1/4 oz can sliced black olives, drained3/4 cup low fat mayonnaise1/2 cup low fat sour cream1/2 cup medium salsa
Prepare pasta according to package directions. Drain and rinse under cold water. Toss with oil and sprinkle with cumin. Salt and pepper to taste. Layer pasta, chicken, beans, corn, bell pepper, green onions and olives in a 9 x 11 inch glass dish. In a small bowl combine mayonnaise, sour cream and salso; mix well. Spread mixture evenly over top of pasta, sealing to edges. Cover and chill at least 6-8 hours.
