Spicy Cilantro Peanut Slaw

Ingredients
Salad1/2 large head green cabbage, very finely chopped (1/4" strips)1/4 c dry roasted peanuts, coarsely crushed in food processor, or chopped3/4 c thinly sliced scallions3/4 c chopped cilantroDressing2T rice vinegar1T agave nectar, honey, sugar or splenda2 tsp sesame oil2 tsp soy sauce1 tsp Sriracha sauce1/4 cup canola or peanut oil.
Directions
In a small bowl or measuring cup, combine all dressing ingredients except the canola or peanut oil. Mix well. Gradually whisk in oil until combined. Set aside.

Combine all salad ingredients in a large bowl. Combine with a small amount of the dressing, and gradually add dressing to taste. Season with salt and pepper.

    My family and I really liked this dish. I used 2 tsp of the sriracha because we like it hot, but others may want to use it sparingly. Also, we omitted the peanuts and cut back on the amount of canola oil. - 6/29/09
