Swedish Pancakes

.75 C Egg Beaters (3 eggs)3 tsp sugar2 C skimmed milk.5 tsp. salt3 tsp melted margarine1.5 C flour
In a bowl, beat eggs slightly. Add milk, sugar, and salt and beat slightly again. Slowly add flour as continue to beat until smooth. Melt 3 tsp of margarine and beat in. Batter will be thin.
Preheat a griddle to 375 degrees Grease bottom of griddle with small amount of margarine (place margarine on paper towel and swipe across griddle). Add slightly less than 1/2 cup of batter and spread out to an 8 inch circle. Cook until the batter gels and changes color to a slightly darker yellow on top and when you lift up the edge of the pancake the bottom is a golden brown. Flip over and cook other side. The pancake is done when the bottom is polka dotted with golden brown spots (will not be a solid color). If griddle is too hot, they are easy to burn. They will be thin like a crepe. They freeze well and can be reheated easily in the microwave.
