Wheatberry Salad

Ingredients
1 cup hard winter wheatberrieskosher salt1 cup diced red onion6 tbsp olive oil2 tbsp balsamic vinegar3 scallions, minced, white and green parts1/2 red bell pepper, small, diced1 carrot, small, diced1/2 tsp freshly ground pepper
Directions
Place the wheatberries and 3 cups of boiling salted water and cook, uncovered, over low heat for approximately 45 minutes, or until they are soft. Drain
Saute red onion in 2 tbsp olive oil until translucent.
Turn off heat!
After heat is OFF,, add the additional 4 tbsp of olive oil and the balsamic vinegar.
Combine everything.
Let salad sit for 30 minutes to an hour on the counter. Taste and re-season as necessary.
Best served at room temp.
This makes 8 1/2 cup servings
