Mini Portabella mushrooms - about 4 or 5 chopped upTaco seasoning - 2 tspwater- about 1/8 cupsalsa - 1 tbsp2% mozzerella cheese - shredded 1/4 cupoptional - jalepeno peppers - diced about 1 tbsp (to taste)flour tortilla - 1 tortilla, medium
Saute the mushrooms in water and taco seasoning until mushrooms are tender and liquid is gone.
Add peppers if desired and mix well.
Use cooking spray or no calorie spray butter on a frying pan. Place tortilla on the pan over medium heat and put the mushrooms, salsa and cheese on on half of the tortilla. fry until just warm (about 1-2 mins) and then fold the tortilla in half over the ingredients. continue cooking for about 2 minutes or until the side is slightly brown and crispy then turn over and fry the other side about 2 mins. May be served with sour cream but remember to add the calories for it.
