Rich and Moist Chocolate Cake

1 Large Zucchini, finely grated (about 2 cups)1 Pkg. chocolate cake mix 1 Large egg2 Large egg whites3/4 cup plain nonfat yogurt3/4 cup natural no sugar added apple sauce
Preheat oven to 350 degrees.
Lightly coat bottom of a 9 by 13 inch glass cake pan.
Grate zucchini and set in a mesh strainer over a bowl and lightly press to release water, or wrap in a kitchen towel and lightly squeeze out moisture. In a large mixing bowl, combine the cake mix, eggs, egg whites, nonfat yogurt, and applesauce. Beat on low speed with an electric mixer for 2 minutes, scraping sides of bowl often. Fold in grated zucchini. Pour into prepared cake pan.
Bake for 45-50 minutes or until toothpick inserted into the center of cake comes out clean. Cool completely.
This cake is great plain, or you can jazz it up by adding a little Cool Whip Lite, Fat free chocolate sauce or dusted with a little powdered sugar and cocoa powder.
Not a big Chocolate Fan?: You can use different flavored cake mixes, and this turns out just as YUMMY. But if using lighter color, such as a white or yellow, peel zucchini 1st, so that the green doesn't show through the cake.
