Party Three Bean Salad

Ingredients
2 cups of fresh green beans2 cans of chick peas (drained and rinsed)2 cans of kidney beans (drained and rinsed1/2 cup of cider or red wine vinegar1/2 cup of sugar 1/2 cup of olive oil 1 tsp. of black pepper1 tsp. of dried dill weed
Directions
Steam the green beans for 10 min.
Drain and cool beans with cold water.
In large serving bowl add:
Kidney beans
Chick peas
Green Beans
Whisk the rest of the ingredients together and pour over the beans.
Toss gently to coat beans.
Cover and let marinate in the fridge for several hours before serving.
Serves 16 1/2 cup servings

    I like this recipe but next time I'll make it with less oil and maybe a little more vinegar. The "sauce" is just a little too oily for me, but it tastes great. I think you could substitute whatever kinds of beans you like. Super fast and easy. - 9/22/09

    I remember having this salad as a kid, but it was made with wax beans instead of chickpeas. I could only find canned wax beans, and used frozen green beans I had on hand- just rinsed in water to thaw. Will try as I remember it- served alongside cottage cheese and pickled beets when I was a kid. - 3/3/11
