Ingredients
3 cups halved sliced zuchini1 1/2 cups cubed eggplant1/2 cup of roughly chopped onion1/2 cup petite diced tomatoes2 tsp olive oli1/4 cup chicken broth or vegetable broth1 Tbsp chopped fresh parsley 2 Tbsp chopped fresh basil1tsp chopped fresh thyme3 Tbsp balsamic vinegar1/4 cup feta cheese
Directions
In a 12 inch saute pan (nonstick works the best) over medium to high heat saute the zuchini, eggplant and onions in the oive oil 3-6 minute. If the vegies start to brown add the chicken broth. Season with salt and pepper.

Add the tomatoes and herbs saute until most of the juice from the tomatoes evaporates.

Sprinkle the balsamic over the veges and saute for 1-2 minutes.

Remove from heat sprinkle on Feta cheese.
Serve warm. Makes 4 1- 1 1/2 cup servings

To reduce the fat use less oil or a nonstick spray and / or omit the cheese.

    I enjoyed these. The vegetables were very soft by the time I got all the ingredients in, so I would cook them slower or be faster in pulling it together in the future, however the flavor is very good. - 7/25/09
