Italian Style Low-fat Meatballs

1 lb. lean beef, ground1 lb. hot Italian sausage1 lb skinless, boneless chicken breast3 cups Italian bread crumbs3 large eggs3 stalks celery1 medium Vidalia onion2 large cloves of fresh garlicItalian seasonings and garlic sea salt
Yields 72 meatballs.
Grind your lean cut of beef in a Cuisenart or other meat grinding appliances. Place in a large bowl. Grind your chicken breast finely and add to the beef. Finally add the hot sausage, 3 cups of bread crumbs, finely minced onion, garlic and celery. Mix thoroughly and then add the 3 eggs, salt (aprox. 1 tsp.) and Italian seasoning (about a tablespoon). Mix with your hands until well blended. Roll into 1 1/4 inch balls and place on an oiled cookie sheet (one with sides). Bake in a 350 degree oven for about 20 minutes. Time will vary with different ovens and different sizes of meatballs. Should make about 6 dozen.
