Pasta Salad with Mozzarella, Sun-Dried Tomatoes and Olives

1/2 cup oil-packed sun-dried tomatoes 1/4 cup white wine vinegar1 garlic clove, minced1 pound whole wheat fusilli pasta12 ounces tomatoes - chopped16 ounces of water-packed mozzarella cheese, drained and cut into 1/2 inch pieces1 cup basil, thinly sliced1 cup freshly grated Parmesan cheese1/2 cup minced pitted black olives
Blend first four ingredients in processor until tomatoes are coarsely chopped. Set dressing aside.
Cook pasta al dente. Add dressing to hot pasta, toss to coat. Cool, stirring occasionally. Add other ingredients and toss. Season with salt and pepper.
