Slow Cooker Chicken Thighs w/Mushroom Sauce

Ingredients
8 chicken thighs1 cup chopped onions1 cup chopped carrots2 cans mushroom soup, reduced fat1/2 can evaporated milk, reduced fat4 tbsp fresh parsley1 cup chopped fresh mushrooms (optional)
Directions
Makes 4 servings of 2 chicken thighs each.

Chop onion, carrots (and mushrooms if desired) then combine all ingredients in a slow cooker, turn on for 6 hours on low or 3 hours on hight, or put this in a casserole dish in the oven at 375C for 35mins. Serve with brown rice (make sure you put this on first as it takes 45min to cook brown rice on the stove). For sides try steamed string beans or broccoli with garlic. Enjoy!

    This was excellent. I used boneless skinless thighs. Added a big spoonful of lf sour cream at the end. Served over brown rice. This would be good over chicken breast chunks too. - 9/21/10

    made it in the slow cooker, all like in the recipe, I just added a bit celery and used skinless boneless thighs . I came home the House smelled good but when I tasted the food, it was tasteless and looked not so appetizing. After major adjustments it was edible. Sorry I am not sure what I did wrong - 3/3/10

    Made this for dinner and it was easy to set up, cheap to execute, and very tasty. I actually only ate 1 thigh (halfs the calories), and served this over brown rice with steamed broccoli - sprinkled it all with garlic.. super tasty. Thanks! Great winter "busy day" meal. - 12/29/09
