Aloo Gobi

Ingredients
1/2 T Olive Oil1/2 onion, sliced1 clove garlic, minced2 t grated ginger, mixed with a few drops of water to make a paste1/2 t fennel seed1 t cumin1/2 t garam masala1/2 t chili powder1/2 t coriander1/2 t turmeric2 potatoes, cubed3/4 head cauliflower, cut into florets1/2 T fresh cilantro
Directions
Heat oil over low heat. Saute onions, garlic, ginger paste, and fennel seed until browned, 1-2 minutes. Add dried spices and cook another 30 seconds, stirring constantly.

Add potatoes and 1/8 cup water, stir to mix, cover and simmer 7-10 minutes.

Add cauliflower, cilantro, and 1/8 cup water, cover, and cook an additional 10-15 minutes, or until potatoes and cauliflower are tender.
