Low Fat Feta Stuffed Pork Chops

Ingredients

2 center cut boneless pork chops1 oz reduced fat feta cheese3 wedges Laughing Cow Light Swiss cheese1 shallot, minced1/2 tbsp extra light olive oil4 tsp Grey Poupon Dijon Mustard1 oz lemon juice1 tsp ground oregano
Preheat broiler with oven rack on 2d to top shelf.
Saute shallot in olive oil until transparent. Mix well with feta & swiss cheese.
Mix mustard, lemon juice & oregano & set aside.
Sprinkle salt & pepper to taste on both sides of pork chops. Slice one edge of the pork chop to form a deep pocket.
Stuff pork chops with cheese & place on rack of broiler pan. Cover one side of chop with mustard mix. Broil 8 minutes.
Remove chop from oven & carefully turn over. Coat other side of chop with remaining mustard mix. Broil another 7 minutes.
Be sure to check & make sure the pork is fully cooked! Serve immediately while hot.
*I used basil & sundried tomato feta cheese instead of regular feta. Added a bit more flavor. Yum!
