Meatless Lasagna

Ingredients
Meatless (Vegetarian) Lasagne2 cartons (12 oz each) small curd cottage cheese1 cup grated Parmesan cheese1 Tbsp dried parsley1 1/2 tsp dried oregano8 ounches uncooked lasagne noodles3 cups shredded mozzarella cheesePrepare below Lasagne Sauce. Mix cottage cheese, 1/2 cup of Parmesan cheese, parsley, salt and oregano; reserve. Heat oven to 350. Reserve 1/2 cup sauce. Layer 1/3 each of the noodles, remaining sauce, mozzarella cheese and cottage cheese mixture in ungreased lasagne pan, 14x8x2 inches or baking pan 13 x 9 x 2 inches. Repeat 2 times. Top with reserved sauce; sprinkle with remaining Parmesan cheese. Bake uncovered 45 minutes. Let stand 15 minutes. 12 servings.LASAGNA SAUCE2 cans (15 oz each) tomato sauce1 can (16 oz ) stewed tomatoes with liquid3 cans (4 oz each) mushroom with liquid1 medium onion, chopped (about 1/2 cup)2 tbsp sugar2 tbsp dried parsley1 tsp salt (or less to taste)1 tsp dried basil1 clove finely chopped garlicHeat all ingredients to boiling, stirring occasionally; reduce heat and simmer for 45 minutes.
