Quick Mexican Rice and Beans

1 cup uncooked instant brown rice1 cup canned black beans, rinsed and drained.2 tbsp choppe fresh cilantro1oz of reduced fat monterey jack cheese shredded or diced1 tsp of chili powder1tsp ground cummin.
In a microwave safe bowl, combine rice and 1 cup water. Cover with plastic wrap and microwave on high for 5 minutes. Remove from microwave and let stand for five minutes.
Add remaining ingredients and toss to combine.
Makes one serving.
