Pineapple Upsidedown cake

Topping3 Tbs butter3/4 cups brown sugar (firmly packed) 6 slices pineapple Cake1/2 cup butter1 cup sugar1 egg1 1/2 cup flour1 1/2 tsp baking powder1 tbs vanilla extract1 tbs pineapple juice1/2 cup lowfat milk
*Makes 10 servings
1) Preheat oven to 375 degress
2) Melt 3 Tbs of butter in 9 inch round pan
3) Sprinkle brown sugar; arrange pineapple slices in a design on top of the brown sugar (set aside)
4) Cream butter and add in the sugar gradually until light and fluffy
5) Add egg and beat well
6) Add sifted flour and baking soda alternatly with milk until well blended
7) Add in the vanilla and the pineapple juice until mixed in completely
8) Pour over the pineapple design
9) Bake at 375 degrees for 45 minutes or until a wooden pick inserted comes out clean
