Ingredients

1 lb lean ground beef2 zuccini1 package of frozen corn1 tub of frozen green chili (12 oz)1 can of rotellow fat shredded cheese1 package of taco seasoning
In a large pan.
cook ground beef til brown.
add taco seasoning. Or you can just add whatever seasonings you like.
dice up zuccini into bite size pieces.
add the bag of frozen corn(12oz 0r 16oz size) to the ground beef.
add the zuccini to the ground beef.
add the rotel and the green chili.
turn the stove on high until it starts to boil, then turn it down
to med/med low and let it simmer for 30 min.
serve in bowls and top with shredded cheese or sour cream. whatever toppings you might like
makes 6 to 8 -1 cup servings.
