Creamy Curried Shrimp

Ingredients
2 tsp olive oil1 red bell pepper, sliced2 tsp garlic, minced2 tsp ginger, grated2 tsp curry powder1 lb medium shrimp, peeled and deveined1 c chicken broth1 Tbl lime juice1/2 c fat-free sour cream1/2 c fresh cilantro, chopped (or 1/4 c dried)
Directions
Heat oil in a large non-stick skillet. Add pepper and saute for 3 minutes. Add garlic, ginger and curry and cook for 1 minute. Add shrimp and saute for 1 minute. Add broth and lime juice and cook for 1 minute. Remove from heat and stir in sour cream and cilantro.
