Santa Fe Salad with Seitan and Tahini-Lime Dressing

Ingredients
1 can beans1 can Golden corn2 raw scallions12-20 grape tomatoes1 avocado1 package seitan1 head romaine lettuce (optional) For dressing: 2 limes, squeezed2 TBs Tahini
Directions
1. Rinse beans and corn, and add to bowl (can use fresh, of course)
2. Slice scallions, avocado and seitan in bite-size pieces and add to bowl.
3. Rinse grape tomatoes and slice in half longways, add to bowl.
4. Squeeze juice from 2 limes into a small bowl. Add 2 tablespoons of tahini and stir until smooth, coat salad lightly.
5. Place salad in the fridge and let chill.
6. Optional: Serve on a bed of romaine lettuce.

Makes approx 6 1-cup servings.
