Tabouleh with Quinoa

Ingredients
1 Cup Quinoa Grain Organic 1.5 cups Parsley minced1 large Cucumber peeled and diced 2 cup cherry tomatoes sliced in half1 tsp salt3 cloves garlic minced12-18 Mint Leaves minced1/2 cup diced Scallions1/4 cup Olive OilJuice of 2 lemons
Directions
Rinse Quinoa then add 1 cup to 2 cups of boiling water. Simmer 25-30 minutes or until water is absorbed. (Follow package directions).

While Quinoa is cooking dice up all your veggies. Once Quinoa is done cooking and has cooled a bit combine with veggies. Pour lemon juice and olive oil. Refrigerate an hour and enjoy.
