2 cups - Penne Pasta1/2 cup - onions, chopped1/2 cup - carrots, chopped1/2 cup - celery, chopped2 large - eggs, cooked3 or 4 tbsp. - calorie -wise Catalina Dressing2 or 3 tbsp. - calorie-wise Mayo
In a medium saucepan bring water to boil. Add pasta and eggs and simmer for 12 minutes. Chop up vegetables and add in a medium bowl. Drain pasta and add to veggies. Cool the eggs. Season with salt and pepper. Chop up cooled eggs and add to bowl. Add mayo and catalina and mix thoroughly.
Makes 6 - 1/2 cup servings.
