1 cup Quaker Oatmeal Pancake Mix3/4 cup skim milk1/4 cup egg whitescooking spray
1. Heat skillet over medium-low heat or electric griddle to 350. Skillet is ready when drops of water sizzle, then disappear almost immediately.
2. Combine all ingredients; stir with wire whisk until large lumps disappear. Over mixing may toughen pancakes. Let stand 2-3 minutes.
3. Pour slightly less than 1/4 cup batter for each pancake onto a skillet that has been lightly coated with cooking spray.
4. Turn when pancakes bubble and bottoms are golden brown.
Makes 8 pancakes, 1 pancake = 1 serving.
