1 red potato, cubed and boiled1 tbsp raw celery, chopped (more if you want)1/8 red onion, raw and chopped1/4 pickle spear, chopped1 tsp cayenne pepper1 dash black pepper1 tsp garlic powder1 tsp dried parsley1/2 tbsp olive oil
Cube and boil the potatoes. Drain and cool them overnight.
Prepare the celery, onion and pickle. Toss all vegitables and spices in a large bowl. Drizzle with olive oil and toss lightly.
Makes about 1 serving.
