Roasted Corn & Black Bean Salad

Ingredients
1 pkg frozen corn, thawed2-3 tbsp vegetable oil1/2 cup chopped red onion6 Roma tomatoes, chopped1 Red pepper, chopped2 tsp minced garlic2 cans black beans, drained and rinsed1 cup fresh cilantro, choppedDressing:3/4 tsp ground cumin6 tbsp fresh lime juice5 tbsp vegetable oil2 tbsp cider vinegarsalt to taste
Directions
Preheat oven to 450 degrees. In a medium bowl, combine corn and oil. Toss to coat. Spread corn on an ungreased baking sheet. Bake 18-22 mins. Stir every 5-10 mins. Cool. In a large bowl, combine cilantro, onion, pepper, tomato, garlic, beans and corn. Mix well. Add dressing. Toss gently. Serve immediately (but still good the next day).
Makes about 10 1-cup servings.
