Roasted Chicken-Artichoke Calzones

Ingredients
1 (14 ounce) can artichoke hearts, drained & finely chopped1/4 tsp salt1/4 tsp black pepper1 garlic clove, minced2 c thinly sliced fresh spinach leaves1 1/4 c (5 ounces) shredded sharp provolone cheese1 c shredded cooked chicken breast (about 5 ounces)1 tsp olive oil2 tsp cornmeal1 (13.8 ounce) can refrigerated pizza dough
Directions
1. Preheat oven to 425.
2. Pat artichokes dry with paper towel then combine with salt pepper and garlic in large bowl. Add spinach, cheese and chicken; toss gently to combine.
3. Brush oil over baking sheet; sprinkle with cornmeal. Unroll pizza dough onto prepared baking sheet and cut into 6 equal portions. Cover and let rest 5 minutes. Pat each portion into a 6" x 5" rectangle. Spoon 2/3 cup of filling mixture into center of each dough portion. Fold corner of each rectangle over filling to form a triangle. Press edges together to seal. Bake at 425 for 12 minutes or until golden.

    I liked this a lot, made a few changes- for some reason the store was out of pizza dough so I used biscuit dough which cut the baking time a little but was very good. I also replaced the provolone with a low-fat mexican blend. - 6/12/10

    This was okay. Two of my kids liked it and two did not. I liked it, but found the dough to be difficult to work with. - 7/19/09
