Creamy Mushroom Sauce for Pasta or Chicken

0.5 tbsp extra virgin Olive oil3 cloves Garlic crushed1 small onion, finely chopped1 Bay leaves100g fresh mushrooms, finely chopped4 tbsp reduced fat creme fraiche1 stock cube dissolved in approx 0.5 pint hot water1 tbsp finely chopped flat leaf Parsleyblack pepper
Heat oil in pan, add bayleaf and onion, gently cook until onion has softened.
Add finely chopped mushrooms and garlic, cook until tender.
Add stock and bring to boil, add creme fraiche and bring back to boil, seaon, add parlsey and bubble sauce for a a few minutes until reduced down to desired consistency.
Serve over pasta, or chicken, or with vegetables or anything you want!.
