Chicken Cacciatore

Ingredients
* Chicken Breast, no skin, 48 ounces (remove) * Olive Oil, 1 tbsp (remove) * Trader Joes Canned Plum Tomatoes w salt, 3 cup (remove) * Garlic, 5 cloves (remove) * Onions, raw, 4 medium (2-1/2" dia) (remove) * Parsley, 6 sprigs (remove) * Basil, 10 leaves (remove) * White Wine, 8 fl oz (remove) * Pepper, red or cayenne, 1 tsp (remove) * *Barilla Linguine, 16 oz (remove)
Directions
In medium pot, put oil and brown chicken on all sides then remove. Add wine, onion, garlic, parsley and basil. Simmer 5 minutes uncovered. Add tomatoes with juice, crushed red pepper, and salt to taste. Re-add chicken and cook 45 minutes.

Remove chicken and let sauce cook til thick.

Meanwhile boil Pasta & drain. Put a little sauce with pasta & mix. Then more sauce on top. Leave a little sauce in pan, add chicken and reheat.

Place little sauce on top of chicken when serving. Serve pasta with romano cheese when serving pasta as a first course and the chicken as a second. Otherwise serve chicken over pasta.
