Lentils, 1 cupVegetable Broth, 2 cupCarrots, raw, 1 small (5-1/2" long) Celery, raw, 1 stalk, medium (7-1/2" - 8" long) Mushrooms, fresh, 1.50 cup, pieces or slices Onions, raw, 1 largeZucchini, 2 cup, slicedCanned Tomatoes, 2 cupOlive Oil, 1.50 tbsp Seasonings (salt, pepper, cumin, curry powder, chili powder, etc.) to taste, depending on mood
Combine lentils, vegetable broth, carrots and celery. Bring to boil, then reduce heat and simmer about 10 min.
Add remaining vegies and seasonings. Simmer 10 min. or until lentils and vegies are cooked to desired texture.
Makes about 9 - 1 cup servings.
