Apple & Pear Goat Cheese Salad w/Walnuts and Balsamic Vinaigrette

4 oz Asian Salad Mix or Dark Greens40g (or about 2Tbsp) Craisins1/2 a apple (I prefer Granny Smith), thinly sliced1/2 a pear, thinly sliced60g (or 1/2 cup) Walnuts (I toast them for 2 minutes on the stove first)2oz Goat Cheese, crumbled or cubed4 Tbsp Light Balsamic Vinaigrette
Simply mix the salad greens in a large bowl with the craisins, apple and pear slices, walnuts and goat cheese. Pour in the dressing and mix thoroughly. Let it marinate while you set the table and enjoy! I make enough for the two of us plus extra, hence the 3 servings, easily double it for a dinner for four!
