1-1/4 cups semisweet chocolate chips1/4 cup Smart Balance Buttery spread1/4 cup Egg Beaters2 Egg Whites1/2 cup packed brown sugar2 jars (2 1/2 ounce each) prune baby food1/4 cup canola oil2 tsp. vanilla extract1 cup all-purpose flour1/2 cup baking cocoa14 tsp. baking soda1/4 tsp salt1/3 cup chopped pecans1 tsp. confectioners' sugar
Preheat oven to 350.
In microwave, melt chocolate chips and butter; stir until smooth. In a mixing bowl, combine egg whites, Egg Beaters, sugars, baby food, oil, vanilla and chocolate mixture. Combine the flour, cocoa, baking soda and salt. Add to the chocolate mixture; mix well. Stir in nuts. Spread into a 13-in. x 9 in. x 2 in. baking pan coated with nonstick cooking spray. Bake for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Sprinkle with confectioners' sugar. Yield: 1 1/2 dozen.
