2 large sweet potatoes, peeled & cubed4-5 medium red potatoes, scrubbed, SKIN ON, & cubedSoy milk, 1/2-cupButter, 2 T1/2-teaspoon black pepper
Peel and cube sweet potatoes. Scrub and cube red potatoes, leaving skin intact (more nutrients). Put all potatoes in boiling water for 10-15 minutes until starting to soften. DO NOT OVERCOOK potatoes. Drain potatoes, add butter and plain soy milk, black pepper and mash all (with potato masher or blender).
